Peanut Butter Brownies

My mom asked me to send her these brownies.

She’s been in the mood for peanut butter and chocolate ice cream lately (her favorite), but it’s been soooo cold in Michigan, the last thing she wants to do is eat something cold. So, she did the next best thing. She called me up and asked me to whip up a batch of these brownies and send them to her.

As far as brownies go, they’re pretty simple to put together. But, I always run into trouble with the ganache. My ideal coating would be something like the chocolate coating you get on an ice cream cone at  Dairy Queen (remember those?). Like a nice thin, but hard layer of chocolate that you have to bite through before getting to the soft frosting and brownie. It’s my personal quest to be able to create such a thing without using coating chocolate. In the meantime, I have ganache.

Peanut Butter Brownies

  • Servings: 15-20 brownies

Ingredients:

Brownies

  • Your favorite brownie recipe (that bakes in a 13×9 inch pan)
  • 1 cup salted peanuts coarsely chopped (I’ve tried roasted, fried and boiled. All work great)

Peanut Butter Frosting

  • 1 cup peanut butter (I like chunky, but chunky or smooth is fine)
  • ¼ cup (1/2 stick) unsalted butter, room temperature
  • ¾ cup powdered sugar
  • 1/8 teaspoon salt
  • Dash of fresh nutmeg (2 swipes on a microplane)
  • 1 tablespoon milk (whole, or whatever you have on hand)
  • 1 teaspoon vanilla extract

Chocolate Ganache

  • 7 ounces semi sweet or dark chocolate, chopped (Chocolate chips may be substituted)
  • ¼ cup (1/2 stick) unsalted butter, room temperature

Method

Make the brownies:

Prepare your favorite brownie recipe. Stir in peanuts and pour into pan. Bake brownies according to instructions. Let brownies cool to at least room temperature.

Make the frosting:

Combine peanut butter and butter in a medium bowl and beat until well blended. Add powdered sugar, salt, nutmeg, milk and vanilla and beat until combined. Spread evenly over brownies.

Make the ganache:

Combine butter and chocolate in a small saucepan over low heat until smooth. Pour on top of frosting and spread carefully with an offset spatula. Place in the refrigerator until the chocolate has set, about 1½ hours. Cut into squares.
